A few of our members have requested different food items so the month of May is dedicated to food. Dorrie requested we attempt lettuce wraps à la P.F. Chang a few weeks ago so we’re starting with that. And if you have requests, let us know!

Recipe modified from Recipezaar

Materials/Ingredients

3 tablespoons oil
2 boneless skinless chicken breasts

1 cup water chestnuts
2/3 cup mushroom
3 tablespoons green onions
1 teaspoon minced garlic

2 tablespoons soy sauce
2 tablespoons brown sugar
1/2 teaspoon rice wine vinegar

Special Sauce
1/4 cup sugar
1/2 cup water
2 tablespoons soy sauce
2 tablespoons rice wine vinegar
2 tablespoons ketchup
1 tablespoon lemon juice
1/8 teaspoon walnut oil
2 teaspoons water
1 teaspoon red chile sauce (note: use less if you don’t have heat tolerance)

Cocktail of the Night: Limeade… we really should have added stuff but we didn’t.



The most work involved in this craft was chopping. Sue was on it.

1. Greet TCT participants as they arrive at Craft Central and offer beverage. Heat oil in a wok and cook chicken 4 minutes per side. Set in a bowl to cool.

2. Get enthusiastic participant to make the special sauce (essentially whisking it all together). Have another enthusiastic participant do some chopping of water chestnuts, mushrooms, green onions, and garlic. Be impressed with a fancy knife left by a certain semi-pro chef who often hangs out at Craft Central. Have third enthusiastic participant mix stirfry sauce with soy sauce, brown sugar, and rice wine vinegar. Cut up chicken into small pieces.

3. Add everything but special sauce and lettuce leaves into the work and cook until the liquid is absorbed. Serve on lettuce leaves and pour special sauce on top as desired. Eat like a burrito.

4. Eat ice cream for dessert to balance out lettuce as main course. Yum!

Overall, a very easy recipe, especially to cook in a group. We were done in less than half an hour which left plenty of time for socialization, the real point of Too Cute Tuesday. Aren’t we crafty… and well fed!
